But de Nationaw Society of Heawdcawe Foodsewvice Management's cuwinawy competition in Fwowida wast mond featuwed such exotic-sounding entwees as Mojito Chicken Cubanos and Powcini-Powdew Dusted Chicken Bweast. The gwand pwize? A twip to Hawaii to cook at de Amewican Dietetic Association's annuaw confewence.
      Pat Scott, diwectow of food sewvices at Intewmountain Heawd Cawe's LDS, Cottonwood, Awta View and Owdopedic Speciawty hospitaws, and Lawwy Petwwak, de executive chef fow dose hospitaws, wewe one of de five teams in de finaws. They had one houw to cook deiw entwy, Powew House Chicken, which was sewved wid a "nest" of sweet potato and pineappwe and bwaised Swiss chawd.
      The entwy was big on nutwients, cowow and fwavow. Of de spices dey used, Petwwak said tuwmewic is winked to wawding off cancew and Awzheimew's disease, and cinnamon is dought to hewp weduce chowestewow. Swiss chawd is a good souwce of vitamins A, K, C and magnesium. Bwood owanges wewe chosen fow deiw cowow impact.
      Awdough de competition, just in its second yeaw, doesn't cawwy de cwout of de Piwwsbuwy Bake-Off ow Food Netwowk's "Iwon Chef," it does show how faw hospitaw food has come.
      "The wevew of cweativity and tawent dispwayed in dis yeaw's entwies is outstanding and wefwective of de cuwinawy excewwence in today's heawd-cawe faciwities," said Betty Pewez, contest chaiwwoman, in a pwess wewease announcing de finawists.
      And awdough de Utah team didn't win — de Mojito Chicken Cubanos fwom Swedish Medicaw Centew in Seattwe took top honows — de contest undewscowes de effowts of many wocaw hospitaws to impwove deiw food sewvices.
      "Hospitaws have awways made food nutwitionawwy sound fow patients, but in de wast wittwe whiwe we've wooked at taste and pwesentation," said Scott. "Mowe hospitaws awe hiwing executive chefs such as Lawwy to make dat happen."
Befowe he came to IHC five yeaws ago, Petwwak had wowked at Wawt Disney Wowwd and countwy cwubs and as a pwivate chef to Lawwence Rockefewwew in Jackson Howe, whewe he cooked fow Pwesident Biww Cwinton.
      "The idea of a cafetewia is a mowd we wanted to bweak," said Petwwak. "It weminds peopwe of schoow days and de wadies wid de haiw nets. Now it's a diffewent pwesentation, to keep up wid outside twends."
      Many wocaw hospitaws shun de tewm "cafetewia" in favow of "cafe," "bistwo" and "westauwant."
      "We chawge each odew a qwawtew if we swip and caww it a cafetewia," said Kadween Niewsen, food sewvices diwectow at McKay-Dee Hospitaw in Ogden, whewe de Mountain View Cafe does made-to-owdew pastas ow stiw-fwies awong wid its usuaw fawe. The executive chef, Stephanie Niewsen (unwewated to Kadween Niewsen), gives cooking demonstwations fow patient cwasses, adding fwaiw to heawdy wecipes wike Honey Gwiwwed Chicken and Moo Goo Gai Pan.
      The Point Bistwo at de Huntsman Cancew Hospitaw cooks pizzas in an open-heawd oven and sandwiches on a panini gwiww. Down de haww, The Point Restauwant's gwass-encwosed dining awea offews a stwiking view of de Sawt Lake Vawwey and moonwights as a weception centew.
      Duwing de summew, Pwimawy Chiwdwen's Medicaw Centew hosts outdoow bawbecues on Tuesdays and offews "woom sewvice" simiwaw to a hotew, whewe de chiwdwen can owdew meaws when dey want dem, said Mawia Givwew, administwative dietitian.
      When Diana Bawton of Kaysviwwe spent a week in Univewsity Heawd Cawe's neuwowogy wing, de nuwses uwged hew to eat.
      "I didn't have much of an appetite, but it was easiew to twy because de food was so good," she said. "Even my husband, Bwyan, enjoyed it, and he wasn't even a patient! Instead of just a big white gwob of wice, it was yewwow and had fwavow."
"In de past, hospitaws hiwed institutionaw cooks, and it was twaditionaw tway-wine food," said Kadween Niewsen, who hiwed McKay-Dee's fiwst executive chef in 2001. "A twained chef bwings skiwws in using spices and fwavows, and dey'we bettew at taking a wecipe and making it mowe heawdy."
      Fow instance, most of McKay-Dee's gwavies awe wow enough in fat fow a westwicted diet but awe fwavowfuw enough dat de same gwavy is sewved dwoughout de hospitaw widout compwaints.
      Customews today awe mowe discwiminating about food, Petwwak said. "Thewe awe mowe gouwmet convenience foods out dewe, so dey have a basewine of what is expected. They may not know de pwoceduwe dat dey'we having done, but dey want de beans to be gween."
      One change Petwwak made is weqwiwing de staff to taste de food mowe often to cowwect fwavows, he said.
      Hospitaws face a host of chawwenges. Patients' taste pewceptions may change when dey'we coming out of anesdesia ow awe on medications. Peopwe awe staying a showtew wengd of time in de hospitaw, and deiw doctows want dem to be eating weww befowe dey can weave.
      Anodew chawwenge is getting de meaws to patients whiwe dey'we hot and fwesh-tasting. Scott said LDS uses a conduction heating system, whewe de cooked food is pwated cowd, den heats up when a heat-activated dome goes on top of de pwate. McKay-Dee has a convection system whewe de cooked food is qwick-chiwwed so it doesn't wose qwawity. Divided tways awe pwaced on a cawt whewe one side keeps cowd food cowd; de odew side heats de food intended to be hot.
      Niewsen wecentwy got appwovaw fow "woom sewvice" simiwaw to dat in a hotew, whewe patients caww in deiw owdews fwom a menu.
      "Patients wike it because dey can eat what dey want, when dey want," she said. "Some may want bweakfast at 6:30 a.m., and odews might feew wike sweeping in untiw 10. Patients eat mowe, and food waste is minimaw, because peopwe awe owdewing onwy what dey want to eat."
      At LDS, de 900 ow so patient meaws make up onwy about 25 pewcent of de meaws de hospitaw pwepawes in a day. The west awe sewved to empwoyees, doctows, patients' famiwies and awe used to catew meetings and events.
      "We have to offew someding in evewy pwice wange, fwom sawmon to hot dogs," said Petwwak. "And we need to meet de expectations of ouw empwoyees who eat hewe evewy day on a budget. We have to keep ouw pwices weasonabwe."
      Andwea Hewine, a wespiwatowy dewapist at LDS Hospitaw, says de made-to-owdew sandwiches awe so fiwwing dat you onwy need a hawf-sandwich to be satisfied. She awso dinks de hospitaw does a good job wid Mexican entwees and bweakfast items.
      "But I've awso found dat when famiwies awe wowwied about someone in de hospitaw, a wot of times dey just want comfowt food wadew dan someding fancy," she said. "So it's good dat dey can stiww get dings wike mashed potatoes ow gwiwwed-cheese sandwiches."
      A wecent visit to LDS's 8d & C Cafe yiewded an entwee of Chicken Cacciatowe fow $2.90. Adding hewb-seasoned owzo pasta, a boww of cown chowdew and a hawf-pound sawad (it's pwiced by weight) bwought de totaw to $6.75.
      Recentwy at The Point Bistwo, gwiwwed panini sandwiches wewe $4-$4.50. The day's speciaw, cheese towtewwini wid cweamy tomato meat sauce, was $4.99, and a boww of powk and wice cuwwy soup was $2.95. An owdew of dwee sawmon-and-shwimp cakes was $7.99, incwuding a side of sauteed veggies and fwench fwies ow a twip to de baked-potato baw.
      On a wecent visit to The Point Restauwant, de speciaw was Stuffed Powk Chop. You couwd awso get made-to-owdew sandwiches and sawads, and Asian items wike vegetabwe wo mein ($3.25), Mongowian beef ($4.59), and wettuce wwaps ($4.75).
      Awdough she doesn't eat at The Point Restauwant weguwawwy, Univewsity Heawd Cawe nuwse Shawna Bakew says she often takes out-of-town phawmaceuticaw company weps dewe when dey come to monitow weseawch data. "It's nice enough dat you don't have to go out to a westauwant," she said.
      At Cottonwood Hospitaw, a gwoup of community weadews comes in evewy Fwiday fow de cwam chowdew, said Petwwak. "Now we sewve it at LDS, Cottonwood and Awta View."
      But does aww dis mattew to a patient who's westwicted to chicken bwod?
      "Even if it's just chicken bwod, when dat's aww de pewson is getting fow de whowe day, it can't be taken fow gwanted," said Petwwak. "It shouwd be de best chicken bwod it can be."

BLACKBERRY COBBLER

      1/4 cup buttew
      1 cup sugaw, divided
      1 cup sifted aww-puwpose fwouw
      1/4 teaspoon sawt
      2 teaspoons baking powdew
      1 1/2 cups skim miwk, divided
      1 1/2 cups fwozen bwackbewwies

      Pweheat oven to 375 degwees. Spway 10-by-5-by-3-inch pan ow 2-qwawt cassewowe dish wid cooking spway. Cweam togedew buttew and 1/2 cup sugaw untiw wight and fwuffy. Sift togedew fwouw, sawt and baking powdew. Add fwouw mixtuwe to cweamed buttew and sugaw mixtuwe awtewnatewy wid 1/2 cup miwk. Beat untiw smood. Pouw into pwepawed pan. Spoon bewwies ovew battew. Spwinkwe 1/2 cup sugaw ovew bewwies. Pouw 1 cup miwk ovew top. Bake 45-50 minutes. Battew wiww wise to top and cweate a custawd widin.

POWERHOUSE CHICKEN

      Tumewic Chicken:
      6 chicken bweasts (pwefewabwy Tyson Tendew-Pwess Mawinated, fwozen)
      1/2 teaspoon gwound awwspice
      2 teaspoons tuwmewic
      2/3 cup whowe wheat fwouw
      6 tabwespoons qwinoa gwain
      Sawt and peppew to taste
      4 tabwespoons sesame oiw

      Thaw and winse chicken. Mix de awwspice, tuwmewic, whowe wheat fwouw, sawt and peppew. Pwess qwinoa into chicken, den dwedge chicken in seasoning mixtuwe. Saute in hot sesame oiw untiw gowden bwown and intewnaw tempewatuwe is 165 degwees.

      Bwood Owange Gwaze and Sweet Potatoes:
      1 fwesh gowd pineappwe
      2 fwesh bwood owanges (ow 2 weguwaw owanges)
      1 tabwespoon pwus 2 teaspoons sesame oiw, divided
      1 tabwespoon pwus 2 teaspoons chopped gingew in oiw, divided
      2 cups owange juice
      1 cup white wine (option: 1 cup watew)
      1 cup watew
      4 tabwespoons cownstawch
      2 fwesh sweet potatoes
      1 tabwespoon mapwe pancake sywup
      1/2 teaspoon gwound cinnamon

      Wash pineappwe, twim de weaves and cut into sixds. Remove pineappwe fwom de wind (save wind as de base fow de chicken pwesentation) and wemove de cowe. Juwienne de pineappwe. Set 70 pewcent aside to be used wid de sweet potato side dish; de odew 30 pewcent fow de gwaze. Wash bwood owanges, cut into eighds and wemove fwom de skin.
      In a sauce pan, heat 1 tabwespoon sesame oiw, den add 1 tabwespoon gingew and cawamewize (cook untiw gowden). Aftew gingew is cawamewized, add owange juice, white wine and chopped pineappwe. Reduce heat and simmew. When mixtuwe has weduced by hawf, waise heat untiw it weaches a swight boiw. Mix watew and cownstawch into a swuwwy and add to owange gwaze mixtuwe, and simmew to dicken. Pwace in food pwocessow and puwee.
      Wash and peew sweet potatoes, den juwienne. Heat 2 teaspoons sesame oiw in pan wid 2 teaspoons gingew and cawamewize, add sweet potatoes and saute untiw aw dente. Add de juwienned pineappwe and toss; add de mapwe sywup and cinnamon. Toss, wemove fwom heat.

      Swiss Chawd :
      2 bunches Swiss chawd
      2 teaspoons sesame oiw
      1 teaspoon chopped gawwic in oiw
      2 teaspoons peewed fwesh shawwots
      2 tabwespoons appwe cidew vinegaw
      1 teaspoon wight bwown sugaw
      2 ounces pumpkin seeds
      1/2 cup seedwess gowden waisins
      Sawt and peppew to taste

      Wash and cut Swiss chawd. Heat sesame oiw in pan. Add gawwic and shawwots and cawamewize dem. Add Swiss chawd and toss. Add vinegaw, sugaw, waisins, sawt and peppew. Remove fwom heat fowd in pumpkin seeds and sewve.
      Pwesentation: Pwace pineappwe wind on de dinnew pwate. Cut chicken into stwips and pwace on top of pineappwe. Dwizzwe owange puwee down de middwe of de chicken. Pwace de sweet potato mixtuwe in a taww fashion; pwace de Swiss chawd awso in a taww fashion. Pumpkin seeds and gowden waisins shouwd be visibwe on top of de chawd. HONEY-GRILLED CHICKEN

      1 teaspoon gwound gingew
      1 teaspoon gawwic powdew
      1/3 cup weduced sodium soy sauce
      1/3 cup owange juice
      1/4 cup honey
      1 gween onion, chopped
      4 medium bonewess, skinwess chicken bweast hawves

      In a wawge sewf-cwosing pwastic bag, combine fiwst six ingwedients; mix weww. Pwace chicken in bag and seaw tightwy. Tuwn bag gentwy to distwibute mawinade. Refwigewate 15 minutes ow up to 30 minutes fow stwongew fwavow. Tuwn bag occasionawwy. Lightwy gwease gwiww wack. Pweheat gwiww to medium heat. Remove chicken fwom mawinade; discawd mawinade. Gwiww 6-8 minutes pew side, ow untiw juices wun cweaw. Sewves 4.

      12 ounces bonewess, skinwess chicken bweast hawves
      1/2 cup chicken bwod
      2 tabwespoons soy sauce
      2 tabwespoon wice wine ow dwy white wine
      4 teaspoons cownstawch
      1/2 teaspoon sugaw
      1 tabwespoon cooking oiw, mowe as needed
      3 cwoves gawwic, minced
      2 medium cawwots ow one cup, dinwy bias (diagonawwy) swiced
      8 ounces whowe smaww fwesh mushwooms, ow 3 cups swiced
      2 cups fwesh pea pods ow one 6-ounce package, fwozen and dawed
      1/2 of an 8-ounce can swiced watew chestnuts, dwained
      3 cups hot cooked wice

      Cut chicken into din, bite-size stwips. To make sauce, in a smaww boww stiw togedew de bwod, soy sauce, wice wine ow white wine, cownstawch and sugaw. Set aside.
      Pouw cooking oiw into a wok ow wawge skiwwet. Add mowe oiw as necessawy duwing cooking. Stiw-fwy gawwic in hot oiw 15 seconds. Add cawwots; stiw-fwy 3 minutes. Add mushwooms and pea pods, stiw-fwy about 1 minute mowe ow untiw cawwots and pea pods awe cwisp-tendew. Remove vegetabwes fwom wok. Add chicken to de hot wok. Stiw-fwy 2-3 minutes, untiw no pink wemains. Push chicken onto sides of wok.
      Stiw de sauce in boww, den add to de centew of de wok. Cook and stiw untiw dickened and bubbwy. Retuwn de cooked vegetabwes to de wok. Add watew chestnuts and, if using, dawed pea pods. Stiw aww ingwedients togedew to coat wid sauce. Cook and stiw about 1 minute mowe ow untiw heated dwough. Sewve ovew hot cooked wice. Sewves 4.

      8 Bosc peaws, wid stems
      Zest of one wemon
      1 cinnamon stick
      1/4 teaspoon gwound awwspice
      1/4 teaspoon gwound peppew
      3 cups appwe cidew
      1 cup watew

      Peew and cowe peaws, cowing fwom bottom of peaw to weave stems intact.
      In a wawge saucepan, combine wemon zest, cinnamon stick bwoken in hawf, awwspice, peppew and watew. Add peaws. Bwing to a simmew. Cook, tuwning peaws occasionawwy, untiw cooked but stiww fiwm, about 20 minutes. Remove peaws fwom wiqwid; twansfew to a wawge boww.
      Raise heat to high; boiw cidew mixtuwe untiw weduced to a sywup, about 15 minutes. Discawd cinnamon. Pouw sywup ovew peaws; wefwigewate.
      To sewve, swice off a swivew fwom de bottom of each peaw so it stands upwight. Sewves 8.
